Dr. Moumita Ray has been a wonderful addition to our teams’ talents and expertise. Dr. Ray has expanded our capabilities and understanding of oil-in-water emulsions for food products. She has also been working on preparing food grade, all-natural emulsion systems for one of our clients and has successfully developed a stable vegetable oil emulsion that is being formulated into a commercial beverage. We anticipate additional innovations in oil-based emulsions during Dr. Ray’s second year of her program with us.
